Peaches!

Peaches!  On Monday I sporadically decided to pick up a 22lb box of peaches at the local farm stand!  What I realized the next day, is that they were all ripe, and needed to be used ASAP!

So here’s the run-down on what you can do with 24 GIGANTIC peaches in record time:

First, broil them with some cinnamon and eat for breakfast on peanut butter french toast, yum!

Second, make peach cobbler… and then eat it for dessert and breakfast for the rest of the week.

Third, Freezer jam.  Not all pictured here… because those were the only three matching jars I could find, the rest are all random leftovers!  ;)

Fourth, make a double batch of the best dressing ever to store up in the freezer for the winter.  It’s like summer in your mouth, and doesn’t just have to be over a salad… it’s also pretty awesome just with some crusty bread and cheese for lunch!  I used the recipe for the dressing from this salad (which is also amazing in its entirety btw), and just subbed a peach for the nectarine.  Also, I leave the peel on the fruit and just stick blender the heck out of it!  :)

And finally, besides just plain devouring a few, slice up the rest for the freezer!  For smoothies or cobbler all year long!
