Parfait To-Go!

I always have trouble coming up with what to eat for breakfast.  I’m not a huge fan of cereal, but at the same time I’m lazy in the morning.  So when I saw this idea for make-ahead parfaits I got really excited!

Basically you mix 1/3 cup of oats with 6 oz of Greek yogurt and then layer with fruit in a portable container.  You have to let them sit at least overnight so the oats get soft.  But that is fine with me… they are ready to go in the morning!  In the original recipe she adds a splash of milk to the yogurt/oats mixture which I would recommend.  I didn’t do this the first time and I was amazed at how thick the yogurt got.  The milk would just thin it down a bit I think.  :)

I used three different kinds of frozen fruit blends in my layers… Fred Meyer had them on sale so I may have gotten a little excited about all the different kinds!  ;)  But you could use just one kind, and you could use fresh fruit too, but I like how when the frozen fruit thawed overnight some of the juices mix in with the yogurt and make it even more delicious!

I’m excited to make these more often and try different combinations of yogurts and fruits!!
