Today is one of those “I made something creative, but I didn’t make it up” sort of posts.
Because when I took this with me to a breakfast-for-dinner mom’s night, everyone was telling me how fancy my contribution was. Outside: beaming. Inside: yeah, it’s pretty, but I can’t take too much credit. I just picked an awesome recipe!
And for as fancy as it looks, it was an incredibly easy recipe to follow. And an incredibly easy recipe to double as well! I made one to take with, and one to stay home with Aaron and Abbi for dinner (and breakfast for all of us the next morning).
Besides how fancy (do you think I’ve used the word fancy enough times to describe this recipe yet?) this obviously looks, it was SUPER tasty too! The dijon mustards and greek yogurt really gave this a great tangy but full bodied taste and texture! Yumm! I’ll definitely make this again!

PS… it reminds me of mom’s asparagus tart! Also super tasty!
