I recently came across a recipe for Honey Lemon Chia Seed Muffins that boasted a light texture because of the ricotta that was whipped into them.
Well this morning I wanted to make some muffins that a mama-friend and I could enjoy while our babies played and those muffins were still on my brain.
Only, she doesn’t do any lactose so I had to adapt the recipe a little. (Subbed applesauce for the ricotta)
And you know what? They were still darn-delicious!
And instead of brushing the tops of the muffins with honey, I just drizzled a little on the center of it. And honestly, I only did that to the first muffin I ate… the lemon flavor in these was great by itself!
And yes, I said the first one. While Abbi was doing side-stepping laps around the coffee table, and my friend’s daughter was happily bouncing in the jumparoo, we mamas sat back and dug into 2 (ok, maybe 3) of these muffins each!
I’d call that a successful morning!
