Ok, I know that is a really, incredibly long name for a pasta salad… but how do you choose which ingredients to put in the title?? I feel like I’m still missing some… apples? other fresh veggies?
So many good ingredients… such a good flavor combo! I thought it might be a little weird, but gorgonzola and pesto go quite well together!
Best part about this? Well… I guess there are a few…
1. Fairly healthy one-bowl meal
2. I’ll give you my recipe below, BUT you could EASILY substitute various fruits/veggies/nuts/cheese/meats for what is readily available in your fridge
3. You can put this together ahead of time so dinner is ready whenever you are ready to eat
4. You can put this together while trying to corral a baby who REALLY wants to lick the pantry door (?!) (she must be taking lessons from the dog)

Chicken, Gorgonzola, and Edamame Pesto Pasta Salad
2 chicken breasts, sliced into strips and pan-fried in some olive oil and salt&pepper
16-18oz penne pasta, cooked (i cooled the noodles off in cold water after cooking)
12oz shelled edamame (i used frozen, and threw them in with the pasta for the last few minutes so they could finish cooking)
1 large apple, diced and tossed in lemon juice
1/2 a cucumber, diced
1 bell pepper, diced
1 can diced tomatoes, drained well
1/2 cup diced red onion
1/3 toasted pine nuts
8oz (or more!) crumbled gorgonzola
3tbsp pesto + olive oil to coat pasta salad
Mix it all together and stick it in the fridge until you are ready to eat!
And like I mentioned above, I think there could many combinations of things you could use according to what you had on hands. (walnuts instead of pine nuts) (goat cheese instead of gorgonzola) (strip steak instead of chicken) (pear instead of apple)
