Deconstructed Rocky Road Cookies

So, were you excitedly anticipating my recipe since I posted these cookies yesterday??  I was so excited to share it with you I actually wrote it ahead of time!  What?!  I’m not scrambling last-minute to get my post up in time?  ;)

These cookies look far more complicated than they are to make.  Just a simple chewy chocolate cookie recipe…

…topped with halved jumbo marshmallows part way through the cookie bake time.

Then after the cookie/’mallow combo has cooled the marshmallows will deflate a little and leave a little divot where this peanut butter-chocolate sauce  sits quite nicely.

Then top the sauce with chopped peanuts and EAT THEM!  They are delicious still warm, but they are also equally as tasty after the cookie has cooled all the way and the chocolate sauce has set back up.  Ready for the recipe yet?  See below…

Deconstructed Rocky Road Cookies

for cookies:

2 cups + 2 tbsp flour

3/4 cup special dark cocoa powder

1 tsp baking soda

1/2 tsp salt

1 1/4 cups butter

2 cups sugar (plus more to roll finished dough in)

2 large eggs

2 tsp vanilla

1 cup mini chocolate chips

 

for toppings:

approx 20 jumbo marshmallows, cut in half

8 ounces melting chocolate (i used TJ’s brand, half milk chocolate, half dark chocolate)

2 tbsp peanut butter

1 tbsp coconut oil

1/3 cup chopped peanuts

 

Mix flour, cocoa, baking soda and salt together in a bowl.  Set aside.  In electric mixer, beat butter and sugar until light and fluffy.  Add eggs and vanilla and beat to combine.  Gradually add flour mixture until just combine.  Chill about 1 hour.  Make 1 tbsp balls of dough, roll in sugar and bake at 350 for 13-15 minutes.

About 3 minutes before the cookies are done (about 10 minutes  in to the baking time), open oven and quickly place marshmallow halves on top of cookies.  Close oven and finish the bake time.  Marshmallows will expand on top of cookies.

(A tip: be careful when placing marshmallows not to press down into cookie, doing this might press through the dough and the marshmallow will melt through the bottom of the cookie… creating a sticky mess when you take them off the baking sheet!)

When cookies are all done baking make the sauce to top them with.  Combine melting chocolate, peanut butter and coconut oil over double boiler until all melted and combined.  Top the cookies with a dollop of the sauce and then sprinkle chopped peanuts to finish them off!

Enjoy warm, or wait until they are cooled and store the rest in an airtight container for up to a week!
