And when I say Popper Muffins I mean Jalapeno Popper Cornbread Beer Muffins. But that is just too long of a title.
Not too long of a recipe though for you to whip up this weekend to go with some chili!
Which is exactly what we ate these with last night. I mean chili and cornbread naturally go together, but throw in cheese and jalapenos and cream cheese and BACON and BEER and it all goes together even better!
- 8-10 slices bacon, cooked and chopped
- 8 ounces cream cheese, softened
- 2 cups shredded cheddar cheese
- 1 box jiffy corn muffin mix
- 1.5 cups flour
- 1 tbsp baking powder
- 1 tsp salt
- 2 tablespoons sugar
- 12 oz beer
- 1 tbsp EVOO
- 2-4 jalapenos, diced include seeds for extra spice
- Preheat oven to 350F
- Spray muffin tins with non-stick spray
- In a large bowl stir to combine bacon, cream cheese, and shredded cheese
- In another bowl whisk to combine cornbread mix, flour, baking powder, salt and sugar
- Add the cornbread/flour mix to the cream cheese mixture, add EVOO and beer and mix until just combined.
- At this point you can spoon some non-spicy mix into your prepared muffin pans if you have non-spicy lovers.
- Mix in the chopped jalapenos (can do this in previous step when mixing everything else together if you don't need any mild muffins).
- Spoon mixture into prepared muffin pans, so the cups are 1/2-2/3 full.
- Bake 20-25 minutes, until edges start to brown and a toothpick comes out clean.
- Let cool a few minutes before removing from pan.
- Serve warm or room temperature!
You’ll note in the recipe I don’t mix the jalapenos in until last, the reasoning for this being if you are cooking for your family and have a few non-spice lovers you can make a few muffins without jalapenos and then mix them in after you’ve dished up that dough.
Oh, and the beer. I used an IPA, because that is what Aaron had in the fridge. And you could totally taste that hoppy tang in the muffins. If you don’t want something quite so strong, you might choose just your run of the mill lager.
I love that there is melty cheese, and little pockets of cream cheese. And I did mention BACON and BEER right?
These were super delicious with chili last night, and I’m betting they are going to be super delicious with some tomato soup this afternoon!
