Greek Salad, Part of a Greek Potluck Menu | 2Create in Color

Lately I’ve been going to a lot of potluck style meals.  Like weekly… that’s a lot!  This week it is even twice!

But you know what makes it really fun??  Picking different themes!!  

It is SO cool how people really get into it!

Tonight I’m going to a Greek Potluck dinner.  I made a Greek Veggie salad (as pictured above).

But there is also going to be spanikopita, lemon orzo soup, Greek-style pork chops, some sort of dessert… I don’t know what a couple of the other people are bringing… but it’s enough to already make me excited to go!!  I’ll report back on what else there was later!

Have you ever done a themed potluck?  Mexican is always a hit, there’s always all-american, and we’ve done a thai one before too!  I’d love to hear if you have other ideas!

    • admin - I didn’t really share a recipe because I didn’t really use one, lol! Roughly it was: 1 english cucumber chopped, 1 pint grape tomatoes halved, half each of a red and yellow bell pepper chopped, half a red onion chopped, and then it was a medium sized container of the pre-mixed olives/cubed feta from freddie’s olive bar. Add a couple glugs of evoo and some good splashes of red wine vinegar and a healthy dose of dried oregano, taste/adjust and let meld for a couple hours in the fridge before eating! -Sam09.05.2014 – 10:34amReplyCancel
