Greek Yogurt Cheese

Did you know you could turn yogurt (in this case greek yogurt) into cheese?  I had no idea until I came across this post from Taste Love & Nourish blog.

And then it was like that ta-da light went off in my head… now I can stop wasting plain greek yogurt.

You see, I adore plain greek yogurt in recipes.  Love the texture and tang it can add.  But by itself I’m just not a fan.  Not really even with fruit mixed in… it might be just this weird mental mind block for me, but whatever.  So it just sits in the fridge until I eventually decide to dispose of it.  BUT… not anymore!

Because now I can turn it into cheese!  It is reminiscent of goat cheese, but a little bit milder (could be the brand of greek yogurt I used too).  Half of the cheese I just left plain and it was a yummy cream-cheese like substitute.  Awesome with the jam I made earlier this week!  The other half I mixed with garlic olive oil and fennel salt… and boy oh boy, it is DELICIOUS!

I didn’t really measure, just eyeballed and taste-tested.  Success!  I’m looking forward to eating this smeared on some fresh bread with maybe a slice of salami.  YUM.

In the meantime I ate a some on a couple of crackers!  (And licked the spatula too… it’s that good!)

So happy I discovered this method!

PS… I promise I’ll post something besides food next week.  ;)
