I’m been having some ridiculous sweet cravings lately… baked goods, ice cream, easter candy… I must admit it’s gotten a little out of control.  

So when I woke up this morning dreaming of mug cookies, I decided I needed to make something a little bit more on the healthy side to go with my coffee this morning (coffee with no cream & sugar this a.m. btw).  

But that something still needed to help curb these cravings… enter breakfast cookies.

So I looked up some recipes, found a few I liked the looks of and started writing down ingredients.  You can see in one of the photos above a glimpse into what it looks like in my kitchen when I’m creating a new recipe… ingredients set down on the recipe as I scribble out and change the amounts I’m using.  

Thankfully… these breakfast cookies turned out PERFECTLY on this morning’s first attempt (<— did I draw enough attention to the word ‘perfectly’ there?).  And I’m 99% sure I wrote down the ingredients correctly despite having to pull Abbi away from the dog food too many times to count.  ;)

The cookies are delicious and light… and yet filling!  I’m writing this post a couple of hours after eating them and I’ve yet to start dreaming about my next sweet-fix.  That’s a good sign based on the last week!

Want to try?  I recommend you do… especially since I only dirtied one bowl, one measuring cup, and my set of measuring spoons (thank goodness because my kitchen was already a disaster area!). Oh, and my silpat, but does that even count?!  

Peanut Butter Banana Breakfast Cookie

2 medium ripe bananas, smashed

½ cup peanut butter

2 tbsp coconut oil, melted

1 tsp vanilla

2 tbsp agave nectar

1 cup rolled oats

½ cup whole wheat flour

1 tbsp chia seeds

½ tsp baking powder

½ tsp baking soda

¼ tsp salt

2 tsp cinnamon

¼ cup raw unsalted nuts, lightly crushed

½ cup dark chocolate chips

Mix all the ingredients together, drop 1 tbsp mounds onto baking sheet and bake at 350F for 15-17 minutes.  Enjoy warm or cooled!

And you know what, I thought I was splurging when I ate four of them (it’s easy to get carried away when they are so tasty and you are breaking them apart to take photos)… but four of these cookies is about 350 calories, with 8 grams of fiber and 12 grams of protein and some healthy fats in there too!  (And yes, there are quite a few grams of sugar… but they are cookies, and it comes mainly from the bananas and agave… so I really don’t feel too bad about that!)

I’d say that’s definitely a pretty decent baked breakfast to go with my coffee!
