Mug Cookies. Whoever thought of making individually sized cookies in the microwave deserves a prize. Because seriously, without this I would probably be eating an entire batch of cookies instead of just one.
Plus… less clean-up… I mean, hello??
I’ve made quite a few of these, and since I’ve gotten the hang of ingredient ratios, I figured it was time to try coming up with my own combination!
- 1 tbsp coconut oil
- 2 tbsp sugar
- 3 drops coconut extract (can sub. vanilla)
- small pinch salt
- 1 egg yolk
- scant 1/4 cup flour
- 1 heaping tbsp sweetened coconut flakes
- 2 heaping tbsp of white chocolate chips (or M&M's, or both!)
- Melt coconut oil in the microwave.
- Add sugar, coconut extract and salt. Stir to combine.
- Add egg yolk and stir to combine.
- Add flour and stir to combine.
- Add coconut flakes and white chocolate chips or M&M's and give your cookie one last stir.
- Cook in microwave 40-60seconds, until the top of the cookie is slightly firm to the touch (like a cookie would be!)
- Enjoy warm!!
