Mug Cookies.  Whoever thought of making individually sized cookies in the microwave deserves a prize.  Because seriously, without this I would probably be eating an entire batch of cookies instead of just one.

Plus… less clean-up… I mean, hello??

I’ve made quite a few of these, and since I’ve gotten the hang of ingredient ratios, I figured it was time to try coming up with my own combination!

Ingredients
  1. 1 tbsp coconut oil
  2. 2 tbsp sugar
  3. 3 drops coconut extract (can sub. vanilla)
  4. small pinch salt
  5. 1 egg yolk
  6. scant 1/4 cup flour
  7. 1 heaping tbsp sweetened coconut flakes
  8. 2 heaping tbsp of white chocolate chips (or M&M's, or both!)
Instructions
  1. Melt coconut oil in the microwave.
  2. Add sugar, coconut extract and salt. Stir to combine.
  3. Add egg yolk and stir to combine.
  4. Add flour and stir to combine.
  5. Add coconut flakes and white chocolate chips or M&M's and give your cookie one last stir.
  6. Cook in microwave 40-60seconds, until the top of the cookie is slightly firm to the touch (like a cookie would be!)
  7. Enjoy warm!!

Notice my green M&M’s for St. Patrick’s Day?  That was my excuse for making a mug cookie for breakfast this morning.  ;)
