Banana Blondies with Dark Chocolate Chunks!

Banana Blondies

So this is how bananas work at my house:

1. buy bananas

2. Aaron and I eat bananas every day

3. buy more bananas

4. repeat steps 2&3 multiple times

5. forget about bananas and let them get too brown to eat

And this time, I already have banana chunks frozen in the freezer for smoothies from the last time we repeated this cycle so I had to come up with something to make with those brown bananas.  Something new of course.

I was craving something sweet so I immediately thought of a blondie type recipe, as I’ve made blondies a couple of times with various ingredients over the past year.  (See here and here.)

And the result?  Well… it’s bananas and dark chocolate, so you really can’t go wrong.

But truly they turned out perfect in my book… plus I made them dairy-free so I can share tomorrow with a nursing mama who isn’t doing dairy at the moment!  (PS… high quality dark chocolate is usually made with no lactose!)

Banana Blondies with Dark Chocolate Chunks

1/2 cup coconut oil

1 cup brown sugar

4-5 over-ripe bananas, pureed (i took my stick blender to them)

1 tbsp vanilla

1 egg

2 cups flour

1 tsp baking powder

3/4 tsp baking soda

1 tsp salt

10oz dark chocolate chunks

Preheat oven to 350F.  Grease a 9×13 pan and set aside.

In a bowl, whisk together coconut oil and brown sugar until combined.  Stir in banana puree, vanilla, and egg.  In a separate bowl mix together flour, baking powder, baking soda, and salt.  Add dry mix to wet and stir to combine.  Fold in dark chocolate chunks.

Transfer batter to prepared pan and bake 35-40minutes or until the start to turn golden on top.  If a toothpick comes out clean they are good to go!
