I’ve been asking for an ice cream maker for a couple of years now.  And every time Aaron says… “what?!  don’t you have enough kitchen appliances already? and where the heck will you put it?!”

And I back off because I know our answer to that question would be different.

Last year I tried borrowing my parents ice cream maker instead… and while it is electric… I did need salt… and i was too lazy to go get some (partly because I wasn’t sure where to go get some), so it sat in my garage for a year before Aaron made me give it back to my parents (where it can return to sitting in their garage).  HA!

But a new ice cream maker has still been swirling around in my head, and I’ve been seeing SO many good homemade ice cream recipes floating around the interwebs!  So… when my b-day rolled around this year, and my parents gifted me an Amazon gift card for almost the exact amount of an ice cream maker… well… you can see where this is going….

So today… I made ice cream, baby!!  And not just any ice cream…

Abbi hung out with me in the kitchen while I fiddled with what I thought would be a good recipe, and then we waited patiently while my fancy schmancy new ice cream maker did the hard part!

And holy moly… I hit the nail on the head with this recipe!  Beginners luck maybe?

But seriously… peanut butter-y, with a subtle egg nog flavor, and melt-in-your-mouth nutella bits swirled throughout!  Yum. Yum. YUM.

Peanut Butter Eggnog Ice Cream with a Nutella Swirl

2 eggs, lightly beaten

3/4 cups sugar

2 cups heavy cream

1 cup eggnog

1/3 cup peanut butter

1/3 cup nutella

Combine and cook all ingredients (except the nutella) in a saucepan over medium heat until it thickens.  Chill in the fridge until cool.  Pour into ice cream maker and let it do its thing according to the manufacturers directions.  A couple of minutes before your ice cream is done pour in the nutella so it gets swirled in!  You can enjoy this soft-serve version immediately, or pop it in the freezer for a couple of hours to enjoy a more regular ice cream consistency!

OH MY GOODNESS.  If you hadn’t really caught on yet… I’m super excited about how this turned out!  I totally think my ice cream maker investment has paid off just with this recipe creation!

And I’m pretty sure I’ll be able to convince Aaron I did have the space to store another kitchen appliance once he tastes this!  You can’t buy this ice cream in a store, so yeah… totally. worth. it.
