Sam’s Loaded Guac!

So when I was at Trader Joes last week I bought one of their four-packs of avocados… that were nowhere near being ripe.

But I knew that in my extra toasty home (my kitchen is located near our wood stove… and it gets roasty-toasty in there when it’s running!)… that these avocados would probably ripen up pretty quick.

And then in the midst of Aaron leaving for hunting, baby everything, Mom coming to stay, etc… I forgot about them.  Oops.

Did they get ripe?  Oh yeah.  In fact, they were a little too ripe.  BUT… too ripe is still A-OK for making guacamole!

And when I make guac, I like it packed with other goodies too!  Don’t get me wrong, some mashed up avocados with a little lemon or lime juice pleases me just as much… but when I make it at home, I make it loaded.

A mouth full o’ flavor!!

If you want to make this tasty loaded Guac here’s what you need:

3-4 avocados

1 packet guacamole seasoning (or a combo of cumin, cayenne, onion powder, garlic powder, and whatever else floats your guacamole boat)

1 can Rotel tomatoes

a good handful of cilantro chopped

1 jalapeno chopped

juice of 1/2 a juicy lime

Mash it all together, let it meld for a bit, add some salt if needed… EAT…

and then… EAT some more… with chips… ’cause chips make everything better.  :)
