Carrot Cake Sandwich Cookies with Lemon Cream Cheese Frosting!

Please forgive me, because I’m about to go into a sugar coma.

I had to taste test these.

And I had to taste test them like three times in all of their stages (frosting alone, cookie alone, cookie and frosting…).

You see, originally I made those carrot zucchini bars, and they called for this Lemon Cream Cheese Frosting.  Well, I figured that most of the time, recipes never call for enough frosting, so I doubled the batch.

And lo and behold… I probably could have made just one batch and been fine, but it gave me an excuse to try another recipe as well!

Which was doubly awesome, because those carrot zucchini bars got DEVOURED at MOPS yesterday morning.  (no leftovers, what?!)

But, let me tell you, I’m so glad I made that extra frosting because it is DELICIOUS!  and goes perfectly in these carrot cake cookies!

So, as I mentioned, I obviously had to “taste test” the final product as well.  And they didn’t disappoint!  I stood in the kitchen gobbling them up while I watched that spider spinning its web.  Kinda cool!

Also… I feel like this post is somewhat disjointed… can we blame it on that sugar coma??  ;)
