Spicy Corn Chowder

Spicy… I used to not really like spicy food that much, I would typically order like 1-2 stars out of 5 at a Chinese or Thai place.

… and then…

I married Aaron.

And he likes SPICY.  Jalapenos, Habaneros, Red Pepper Flakes, Sriracha… all staples in our household.

Now, he thinks he created a monster.  I still don’t like SUPER spicy, and I don’t put sriracha on everything, but I’ve grown to love that burn… as long, of course, as it still has a great flavor too!

SO… when I told him I was going to make a corn chowder, and did he mind if I made it spicy… the answer was: Duh…

I’m not going to formalize a recipe for you, because I didn’t really follow one, and I kind of used odds and ends of what I had… but… the basics are (in my rambling sort of way using lots of parentheses):

Bacon (fry it up in small pieces, I used half a package), add some chopped onion (i think i used two), let it cook for a bit, add in corn off the cob (i cut corn off of 6 cobs i think, you could use frozen), I threw in some minced garlic (how much? i have no idea), add in some spicy peppers (I cut up one yellow chile, two jalapenos, and i added some red chile flakes for good measure), I added butternut squash because i had some chopped in the fridge already, let cook awhile more, add chicken broth (i used homemade that i had let simmer with spicy peppers already too… used about 32oz), add in cream (you don’t want to know how much), let simmer all together, EAT.  (&enjoy)

Not an exact science here.  I think you could change it up in a bunch of ways and it would still turn out great!  Aaron went back for seconds, that is always a good sign!

The only thing I would improve would be to thicken it up a little more.  I think when we have the leftovers I’m going to add some potatoes and some chicken too for another twist!

Oh, and the spice level of this baby… I can only describe it as a comfortable spicy.  Really, really great… spicy, but not where you have to pause eating to let your mouth cool down!

Looking forward to more soups this fall!  I love this season!
