Stocked up: Freezer Meals!

I can’t believe it has been a month since I wrote this post!  I was so amped on prepping for Skittle’s arrival!

Little did I know that I’d still have plenty of time!  Yeah… still pregnant.  Although, my due date really is only three days away, so fingers crossed she decides to come soon!

I will say that I am glad that I did a ton of that prep work a month ago though, because these last couple weeks have been draining for me.  Let me tell you, the end of pregnancy is hard!  And tiring!  I’m thankful that our little one is cozy and continues cookin, but man am I uncomfortable!!

Anyway, a couple times a week I do get a surge of energy and have been using it to keep up on the house being clean and then picking a task to get off the “someday i’ll do that” list.

This week, I finally decided it was time to defrost the freezer and then make a few freezer meals that we can pull out and bake after Skittle finally decides to make her appearance.

Mom helped me yesterday for a few hours, and I finished up the last couple recipes this morning!  In total, 6 recipes and about 16-20 meals worth of food ready to go in the freezer for me and Aaron!  I’d say that is a win!

By the way, shout out to What’s Cookin, Chicago? Blog… 4 of the 6 recipes came from her and I can tell they are going to be tasty!

First up, Pesto Chicken Stuffed Shells!  I tasted the stuffing for these… yeah… probably the first one I’m going to pull out of the freezer because I’m so excited to eat it!  I mean, pesto… duh ;)

Number two, Chicken Enchiladas with Avocado Cream Sauce!  This sauce… YUMMM!  Thank goodness there was some left over, I’m using it on a taco salad tonight!!  I did make this like a layered casserole though instead of rolling the enchiladas… the way my fam has been making enchiladas for years… way easier in my opinion!  Plus… all the good stuff is still in there!  :)

Recipe number three, Cheese and Sausage Stuffed Mushrooms!  I’ve always loved stuffed mushrooms so I was excited to make these, I’ll serve them with a big salad and extra veggies!

Recipe number four, Baked Penne with Sausage and Creamy Ricotta!  Although, I used slightly different noodles and goat cheese on top instead of mozzarella (thought I had mozzarella… turns out mine had been in the fridge just a little tooooo long).  Pasta has always been a comfort food, so I’m looking forward to pulling this out on a cooler rainy day!

Recipe number five, Venison Meatloaf!  A standard at our house, just thought I’d make some up ahead of time!

And last but not least, Stuffed Peppers!  Btw, don’t know if I just used too much meat (I did add some sausage to the mix, but thought I had cut down on the other meat…), but I had enough filling to make 8 stuffed peppers instead of 4!  And I swear, these were not baby sized peppers!  Works for me though, 4 meals instead of two!  Oh, and I like crisp-er peppers, so I didn’t pre boil mine, I think they will cook enough when the whole thing bakes!

And now that I’ve got all these goodies loaded into my freezer… I’m going to go put my feet up!  I can feel that ‘surge of energy’ quickly passing…
