Easy Holiday Appetizer: Sun-dried Tomato Pesto

It is that time of year where there are lots of parties and get-togethers, many of which it is fun to bring appetizers to share.  Here is a quick and easy one: Sun-dried Tomato Pesto, served with goat cheese and a sourdough baguette!  This was the first time I made it, even though Mom has been making it for years.

I used this recipe from Closet Cooking.  The original recipe tastes great!  But I added a little extra basil and garlic after I mixed it up.  Can you really ever have enough of those ingredients?  ;)  I was also really excited to discover that Trader Joe’s carries sun-dried tomatoes not packed in oil!  OH, and just so you know, you can freeze basil, I do it all the time.  It changes colors, but it tastes just like it was fresh!

I served mine in these little baking dishes with a log of goat cheese buried beneath the pesto.  :)

To make it a little more interesting too, I took my baguettes, sliced them thin, sprayed them with Garlic Olive Oil in my Mr. Misto and pressed them in my panini press.  You could also toast them in the oven.

Spread some goat cheese and pesto on the toasted baguette slice and you are in business!
