Little-Bit-of-Everything Cookies

I love oatmeal… and chocolate chips… and coconut… and peanut butter… and raisins… and craisins… and butterscotch chips… and… and… EVERYTHING!  That’s why these cookies are the best!  Mix everything together, bake and let your taste-buds love on a little bit of everything!  :)

Recipe:

3 cups oats

1 cup all-purpose flour

1 teaspoon baking soda

2 teaspoons ground cinnamon

1/2 teaspoon grated nutmeg

1/2 teaspoon salt

1 cup butter

1 cup creamy peanut butter

1 1/2 cups sugar

1/2 cup packed brown sugar

2 large eggs

2 teaspoons vanilla

3/4 cup semisweet chocolate chips

3/4 cup butterscotch chips

3/4 cup raisins (mix of regular and golden)

1/2 cup craisins

1/2 cup shredded coconut

Preheat 350F.  Whisk oats, flour, baking soda, spices, and salt in a large bowl.  Using a mixer beat butter, peanut butter, and sugars in another large bowl on medium speed until combined.  Add eggs and vanilla and beat until completely smooth.  With mixer on low speed, gradually add dry ingredients and mix just to combine.  Stir in chocolate chips, butterscotch chips, raisins, craisins, and shredded coconut.  Drop rounded tablespoonsfuls of dough about 2inches apart onto greased baking sheets.  Bake cookies until golden brown, 15-17 minutes; transfer to wire racks and let cool.

Then… EAT THEM!!  :)  Or I guess you could share them too… but in my opinion, they might be too good to share.

In fact, I ate them for breakfast this morning!  Then have oatmeal in them… so that means they are healthy for breakfast right?  ;)
