Pumpkin & Caramel!

Fall.  Yup, it has officially arrived.  And… I. AM. SO. EXCITED.  I think fall is my favorite season.  It means jeans and layers and sweaters and peacoats and changing leaves and pumpkin and caramel.  AND PUMPKIN AND CARAMEL.  I know caramel could be year round, but this year I’ve decided it goes better with fall… maybe just because of the two following recipes.

Brown Butter Pumpkin Cupcakes with Salted Caramel Frosting and Pumpkin Toffee Cookies with Salted Caramel Glaze.  Yeah, are you drooling yet?  I’m forever indebted to Maria, of Two Peas and Their Pod, for creating these recipes!  (BTW, I’ve tried several other recipes from her and have never been disappointed!)

So first… the cupcakes.  My best friend and I had our girls day on Sunday centered around making this recipe.  We drank champagne (because of course that’s obviously the best thing to do when baking!), and chatted, and created yummy-ness!

Did I mention between the cupcakes, the caramel, and the frosting you use 9sticks of butter?!  I think that is a sign right there of pure bliss when getting to the eating stage!

I’d never made caramel before, and even though I didn’t have a candy thermometer to verify the correct temperature I think it turned out well.  Meaning we took every opportunity to eat it the rest of the afternoon.  PLUS… there was extra!!

Didn’t I tell you…every opportunity… apples dipped in the leftover caramel from the pan!  SO good.  The salt and sweet and crunch of apple.  SO good.  (and yes, I know I said ‘SO good’ twice, it deserved it!)

Making these cupcakes was the perfect way to spend our girls day!  :)

Most of that above was for my nonexistent Monday post… poor planning on my part.  Sorry.  The rest of this post is leftovers… literally.  I took my leftover salted caramel sauce and leftover pumpkin from the cupcake recipe and made recipe number two… these amazing cookies!

Most of these will be going to work with my hubby tomorrow.  Otherwise I’d be gaining ten pounds this week from sweets.  ;)
