Individual Nectarine and Pear Upside-Down Cakes!

Happy Monday!  Even though it is still warm this week, the shorter days are rapidly reminding me that summer will soon be over.  So I’m trying to get my fill of fresh fruits before they are out of season!  I had a few ripe pears and nectarines and was feeling like something sweet (‘course, i’m always feeling like something sweet).  ;)  I found this recipe on DavidLebovitz.com.  With a couple small changes it was perfect for my ripe fruit!!

Instead of making one big cake I made individual cakes in my jumbo muffin tins!  (Which btw, my fabulous Momma got me!)

I did end up having to make a double batch of the batter part of the recipe to fill all the tins!

The caramel made in the beginning of the recipe combined with the fruit juices created this ooey-gooey yummy-ness!  Maybe it has just been awhile since I’ve had upside-down cake, but if it’s all like this… I’ll be making it again soon!  Keep in mind (just like the recipe suggests too) that this could be made with various types of fruit!  I think the nectarines were DELICIOUS!
