Beach Scramble

This weekend hubby and I went to our family cabin, lovingly called ‘Beach Bottom’.  We only went for the day, but we went early so we could cook ourselves a good breakfast on the outdoor griddle!  I had gotten some peppers at the local produce stand for super cheap so I knew I wanted to use those and the rest of the eggs I had.  We stopped at the store briefly on the way to the cabin for some crab bait, and I picked up some Hot Links to throw in our breakfast scramble.

So.  Peppers and Hot Links on the griddle, just long enough for the peppers to cook a little and the Hot Links to brown on the outside.  Add the scrambled eggs and some seasoning (we used 21 Seasoning Salute from Trader Joe’s).  Can you taste it yet?

We stuffed the egg scramble inside the big poblano peppers and chowed down!  SO delicious!  Even now, I’m figuring out how I can remake this without that fabulous outdoor griddle… saute on the stove and do the poblanos under the broiler… yep… that will be happening soon!  Thinking it would be really good with chorizo too!!!
